My Un-Expected RadDinner…Recipe Included :)

My kids and girlfriend have both been gone traveling out of the country for a few weeks in Mexico City and Bali/Japan!!! Awesome experiences for them  and I’m looking forward to their stories and experiences that they all had and the food that they ate!!!!

And the other night when I made a really unique and healthy meal that was so good and totally unexpected and I had to share this RAD and HEALTHY MEAL.

I made a Bachelor Special Of All Time RadNess

Aka The SARDINE SALAD Of The GODS!! and it was AMAZING

1 Can of Gourmet Sardines in Olive Oil (Trader Joe’s One :))

Half a Medium Onion (Chopped Fine)

1 Large Avocado ( Cut into 12 Pieces)

2 Medium Sized Tomatoes (Chopped Fine)

4 Kale Leaves (Finely Chopped)

3 Tablespoons Pine Nuts (Pignolia) – Toast them on the stove top til they are brown almost charred

Garlic Powder (to taste)

Black Pepper (to taste)

Sea Salt (to taste)

Balsamic Vinegar (to taste)

Fresh Lemon – 1/2 a Lemon squeezed

Extra Virgin Olive Oil (Unfiltered if possible) (to taste….But I personally like to put a lot more then most people)

Half a Jalapeno (Chopped Fine)

Mix all these up and you have an amazing and Un-Spected RAD MEAL!!!!!
